Ginger has been a staple spice across many parts of the world, including Europe, Asia, Africa, and the Middle East. Powdered Ginger has a distinctly strong, spicy-lemon flavour and is hot, bitter and astringent at times. Powdered Ginger pairs beautifully with gingersnaps, gingerbread, or other sweet snacks. It tastes refreshing in tea or hot milk and can also taste great in some spice blends. Ginger's other great uses include stir-fry, rice dishes, stews, and beverages such as mulled wine. Unfortunately, Ginger loses its flavour when exposed to sunlight, so ensure that it is stored in a dark, dry and air-tight environment to preserve its goodness.
Ceylon Providore's Ginger is sourced directly from the growers. It is a labour-intensive process often involving cleaning the roots, sorting the fingers, slicing, dicing and naturally drying until the moisture content reduces to 5%. After that, it is ground to produce the off-white aromatic powder that is ready for consumption. Although growing Ginger is cheap and straightforward, only two kilograms of raw rhizomes would yield roughly 150 to 200g of Ginger powder.
