Ceylon handpicked cloves are prized for their distinct aroma and flavour. Cloves are immature buds that are harvested from the Syzygium aromaticum tree. The process of acquiring these handpicked cloves are extremely labour intensive, requiring harvesters to climb the tall tree and use ropes to tie and pull smaller branches closer so they can be then handpicked. The cloves need to be harvested when it is an immature bud and just before it flowers. This demands the harvesters to be vigilant of the many hundreds of small branches so the cloves can be harvested at the right time. Ceylon cloves provide multiple health benefits due to their rich antioxidants content which include improved liver health, blood sugar regulation, bone health and reducing stomach ulcers.
Cloves have an intense, strong, warm and sweet taste with a bitter, astringent flavour. Some say it smells like Christmas. Cloves can be used in a variety of recipes including spiced rice, pot roasts and even in drinks. The cloves are sourced from Gelioya, a small district in the central province. In Sri Lanka, cloves are popularly used in meat curries, often in mixed seasonings such as curry powders.
