The Jaffna Curry powder has a complex ingredient profile with an exciting amalgamation of 11 spices. Often regarded as the spiciest curry powder, it brings in the spicy, peppery goodness along with a sophisticated, complex flavour of citrusy, bitter-sweet taste from the summer-rich north. The Jaffna curry powder is used in almost all the north's curries (commonly for meats and seafood). However, contrary to curry powders from other regions, the chillies and pepper are already incorporated into the Jaffna curry powder. Hence there's no need to add extra chilli powder for added heat.
