Roasted vs Unroasted Chilli Powder, what's the difference?
Roasted Chilli Powder is a popular ingredient for meat dishes such as Sri Lankan chicken, mutton and beef curries. The carefully roasted, dried and grounded chillies amplify the aroma whilst providing a roasted dark-fruity flavour with a tame heat. Compared to the Unroasted Chilli Powder, the roasted chilli powder will give a reduced heat and adds/compliments to the depth in the taste of the protein without overpowering the dish with heat and spiciness.
Can it only be used for Sri Lankan cooking?
The roasted chilli powder is a versatile ingredient. Famous for its use in various protein-based cooking, it doesn't matter what cuisine you cook. The roasted chilli powder will provide a tame heat and dark fruity flavour with a guaranteed taste enhancement. We've got some great results when we tested the roasted chilli powder on various Thai recipes, including Pad Thai and even when dusted over a simple grilled chicken.
