True Cinnamon from Ceylon (Sri Lanka) is a popular spice well known globally for its sweet, woody and delicate flavour. It is often compared with the cheaper Cassia Cinnamon that is popularly cultivated in China, Vietnam and few South & Southeast Asian regions. Ceylon True Cinnamon is from the Cinnamomum verum plant, which contains much less presence of coumarin (a natural plant chemical that acts as a blood thinner) found in the Cassia Cinnamon variety. Production of Ceylon Cinnamon Quills are extremely labour intensive and a form of fading skillset. The stem is cut, cleaned, dried and then peeled into very thin wafers.
