Harvested from a small village near Gampola in the central provinces of Sri Lanka. The vanilla exudes a buttery creaminess and velvety flavour with hints of spice, lending the vanilla pods an exotic property. These beans are best known for homemade extracts and work in practically all recipes. Used in various cooking and baking applications, including vanilla sugar, sweet sauces, ice cream, cakes and cookies. Vanilla seeds can also be used to add a gourmet visual cue to ice cream, custards, crème brûlées and vanilla-flavoured coffee.

Vanilla beans are derived from pollinating the orchid's yellow-green vanilla flower. Vanilla orchids only grow in particular climates and are very sensitive to their environmental conditions even with years of selective breeding to make them resilient. The orchids take around two years to become a mature plant and, when flowered, has to be pollinated by hand within a given number of days before they perish. It then takes six months for the seed pods to form and mature before they can be harvested. The pods then go through an extensive curing process that lasts another six months before they can be graded for quality based on size, appearance, moisture and aroma before they are ready to be sold. Our vanilla pods are thick, dark, fragrant and moist. In other words: Exquisite.
