Both black peppercorns and white peppercorns originate from the same plant vine, Piper nigrum. The distinct difference in colour, taste and aroma between the two arises due to the processing of the fruit. The Black Peppercorn is formed when the fruits are picked nearly ripe, roasted and dried in the sun until the hull turns brown-black. Whereas, White peppercorns are a result of the hulls beings removed prior to drying the fruit hence usually more expensive than the black pepper. Since the essential oils are found in the hull, black pepper has more of that lemony, woody, characteristically peppery-pungent aroma. White pepper has less aroma and flavour but a sharper pungency and heat in comparison. 

Our white peppercorns are sourced from Gampola, a small village in the central province of Sri Lanka. The peppercorns are harvested, dried and sourced from the local farming community.
